how to make Peanut Butter Spider Halloween Cookies

Ingredients:

  • 1 3/4 cups all-purpose flour
  • 1 tsp. baking soda
  • 1/4 tsp. salt
  • 1/2 cup unsalted butter, room temperature
  • 1/2 cup light brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup smooth peanut butter
  • 1 egg
  • 2 tsp. vanilla extract
  • 1 Tbsp. whole milk
  • 15-20 miniature Reese’s peanut butter cups
  • 1/4 cup semi-sweet chocolate
  • 30-40 candy eyes

Directions:

  1. Line two cookie sheets with parchment paper and set aside.
  2. In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
  3. In a large bowl or the bowl of a stand mixer fitted with a paddle attachment, cream together the butter, light brown sugar, and granulated sugar. Scrape down the sides of the bowl as you mix.
  4. Add the peanut butter and continue to mix until light, creamy, and fluffy.
  5. Add in the egg and vanilla, mixing well while scraping the bowl’s sides.
  6. Mix in the milk until there are no lumps, then add the dry ingredients. Mix until well combined, scraping the bowl again.
  7. Cover the cookie dough with plastic wrap and chill in the fridge for at least 2 hours or overnight.
  8. Once the dough is chilled, preheat your oven to 375°F (190°C). Scoop the dough into about 2 Tbsp. sized balls and place them 2 inches apart on the cookie sheet.
  9. Bake for 10-12 minutes or until golden brown.
  10. After baking, let the cookies sit on the cookie sheet for about 3-5 minutes before placing the Reese’s Peanut Butter Cups on top. This prevents them from melting too much.
  11. Allow the cookies to cool on a wire rack before adding the legs and eyes.
  12. Melt the semi-sweet chocolate in 30-second intervals until fully melted.
  13. Transfer the melted chocolate to a piping bag. Pipe a total of 8 legs from each side of the Reese’s to the cookie. Four legs on each side!
  14. Use the melted chocolate to “glue” two candy eyes onto each spider. Place the eyes on the sides of the Reese’s cup.
  15. Enjoy your spooky treats!
