  5. Remove the lid and lower the heat to cook the onions until they caramelize. This can take anywhere from 2 to 5 hours, depending on your pot size and heat. Check on them about once an hour.
  6. While the onions are cooking, peel most of the papery skin off the garlic. Cut about 1/4 inch from the top of each head of garlic.
  7. Place the garlic on a sheet of aluminum foil, drizzle with a little olive oil, and fold the foil over the garlic. Cook in the oven for about 40-50 minutes until the center cloves are softened.
  8. Once the garlic cools, squeeze the bottom of the head to release the cloves and set them aside.
  9. When the onions are caramelized to a nice amber color, add the garlic cloves and mash them with a wooden spoon.
  10. Stir in the grated ginger, turmeric, and 5 cups of water. Bring the mixture to a boil, then reduce the heat and let it simmer.
  11. Taste the soup; if you want a milder flavor, add another cup of hot water. Adjust salt to taste.
  12. Remove the bay leaves.
  13. Ladle the soup into bowls and serve hot. You can also store any leftovers in an airtight container in the refrigerator for up to 4 days or in the freezer for up to 3 months.
