Directions:

  1. In a large bowl, mix the flour, salt, sugar, and instant yeast.
  2. Slowly add cold milk and knead the mixture until it forms a dough.
  3. Wrap the dough in plastic wrap and chill in the fridge for 30 minutes.
  4. While the dough rests, shape the butter into a rectangle between two sheets of parchment paper. Chill the butter rectangle until firm.
  5. Roll out the chilled dough into a rectangle on a floured surface. Place the chilled butter in the center and fold the dough over the butter, sealing the edges.
  6. Roll the dough out into a larger rectangle and fold into thirds. Repeat this rolling and folding process two more times, chilling the dough in the fridge for 30 minutes between each fold.
  7. After the final fold, roll the dough out and cut into triangles.
  8. Roll each triangle from the wide end to the point, forming the croissant shape.
  9. Place on a baking sheet, cover, and let rise for about an hour.
  10. Preheat the oven to 200°C (400°F) and brush the croissants with beaten egg.
  11. Bake for 15-20 minutes until golden brown.
