  • 10.5 ounce goat cheese log

Directions

  1. In a medium saucepan over medium heat, add the blueberries, balsamic vinegar, lemon zest, lemon juice, maple syrup, and thyme.
  2. Bring the mixture to a gentle boil. Then, reduce the heat and let it simmer for 10-15 minutes until the blueberries start to burst.
  3. In a small bowl, mix the cornstarch with water, then stir it into the blueberry sauce to help thicken it. If needed, turn up the heat slightly to assist with thickening. The mixture should be thick enough to coat the back of a spoon.
  4. Remove from heat and stir in the vanilla. Allow it to cool for 15 minutes.
  5. Lay a square piece of plastic wrap on your work surface. Spoon 1/3 of the blueberry mixture into a log shape at one end of the plastic wrap.
  6. Place the goat cheese log on top of the blueberry sauce. Spoon the remaining sauce on top, letting some drizzle down the sides.
  7. Use the plastic wrap to roll the goat cheese and sauce together, tucking in the ends as you go. Smooth out the sauce around the goat cheese.
  8. Chill in the refrigerator for at least an hour, or overnight.
  9. When ready to serve, carefully remove the plastic wrap. The cheese should keep its shape. Serve with crackers, toasted bread (crostini), or veggies.
